One-Pot Tofu Stir-Fry

Tofu isn’t always a popular ingredient among my American friends, but it’s a staple in many Asian countries. I grew up eating homemade tofu, so there’s no grossness in it for me. I think the main reason I like tofu so much is because my mom always made it differently: tofu with shrimp, ma po tofu, and fried tofu, just to name a few. This one-pot stir-fry is a quick meal with minimal cleaning afterward, perfect with steaming white rice!

Ingredients
4 cloves garlic
3 zucchini squash
3/4 lb ground beef
14 oz tofu
1 teaspoon oyster sauce
1 tablespoon soy sauce
salt, pepper, and red chili flakes, to taste

Method
1. Wash and cut the zucchini lengthwise in half. Cut into 1/4″-inch slices across. Cut the tofu into 3/4″ cubes.

2. Fry the zucchini and garlic with a shot of oil in a pan over medium-high heat until half cooked.
3. Brown and crumble the ground beef into the same pan.
4. Add the tofu, oyster sauce, soy sauce, salt, pepper, and red chili flakes. Stir-fry for about 4 minutes. Be careful not to break up the tofu.
5. Serve with white rice.
6. Enjoy!
